Every Sunday, I make brunch for my family. It‘s usually a mix of the usual suspects – pancakes, waffles, French toast, muffins, eggs, sausage, bacon or fruit.

This recipe is perfect for those mornings where I don‘t want to be in front of the stove, flipping pancakes, especially when I‘m hosting friends or extended family. Instead of making each pancake on the griddle, you stick the batter in the oven, so it‘s all done at once.

Here‘s my recipe for baked apple cinnamon pancakes.

Baked Apple Cinnamon Pancake Squares

2 cups flour
1/4 cup brown sugar
1 tablespoon baking powder
1/4 teaspoon salt
2 eggs
1 1/4 cup milk
1/4 cup butter, melted
1 1/2 cups apples, peeled and diced
1 teaspoon cinnamon

Preheat the oven to 425 degrees. Spray no-stick spray on a 9×13 baking sheet. Set aside.

In one bowl, combine all of the dry ingredients – flour, sugar, baking powder, salt and cinnamon – and mix.

In another bowl, combine the wet ingredients – eggs, milk and butter – and mix.

Pour the wet ingredients in to the dry ingredients. Mix until it‘s just combined. Then mix in the diced apples.

Pour the batter into your prepared dish. Bake for about 15 minutes until a toothpick in the center comes out clean.

Serve with maple syrup, whipped cream, powdered sugar or some warm homemade apple sauce.
